How to make Tomato Sauce aka Ketchup

As a few of you know I'm a little addicted to Heinz Ketchup... today I learnt how to make my own! In Aus they use the term 'tomato sauce' not ketchup and Heinz is no where near as popular as it is in Canada. The brand 'MasterFoods' is commonly used here but I must admit, homemade tops them both! Brad's dad Stephen and his uncles make it from scratch, here's the recipe:
Place ingredients into a large saucepan and boil for 5 hrs than strain through course sieve
9kg ripe tomatos, sliced
1.5kg onions, finely chopped
100g garlic, chopped
1 tbsp ground ginger
Add
1.5kg sugar
1/2 cup salt
1.25kg apple puree
1 cup Ezy-Sauce (water, food acid, ground black pepper, clove oil, chilli)
Simmer uncovered for approximately 1 hr or until thick pouring consistency
Carefully fill into hot sterilized bottles and seal. Makes approximately 5 litres.
